Three different types of waste accumulate here: grease, water and solid sludge. Sludge falls to the bottom of the tank, collecting over time but never exiting into the rest of the system. Water fills up most of the tank until it reaches the height of the outflow pipe towards the sewage system. This wastewater is safe to proceed into the rest of the system. FOG substances float on the top of the water, but a barrier stops the greases from reaching the outflow pipe to the sewer system.
